Whole Milk – 1 and ½ litres of milk
-
Condensed Milk – 2 Cups
-
Sugar – to taste
-
Green Cardamom Powder
-
Dried rose petals
-
Chironji Seeds
-
Nutmeg Powder
-
Saffron strands – optional
-
Dry Fruits – Your choice (Here, I have taken slivered almonds, cashews, and pistachios)

How To Make Basundi The Traditional Way?
-
Take a heavy-bottomed wide pan or Kadai to make the cooking faster & easier.
-
Add the whole milk & the condensed (use full-fat milk) and saffron to the medium-high flame and stir continuously to avoid scorching at the bottom.
-
Let the mixture come to a boil, and reduce the flame. Let it simmer for about 20-25 minutes hours until the milk is reduced to half.
-
If the creamy layer forms on the top and sides of the vessel, scrap it back into the pan, and you will get a nice, pulp, thin custard-like texture.
-
Add half a spoon of ground cardamom, nutmeg powder, and three tablespoons of sugar and stir them well.
-
Let the sugar dissolve; add 2 tablespoons of chironji seeds, slivered almonds, cashews, and pistachios.
-
Finally, add the dried rose petals for garnishing and serve.
