Make Refreshing & Chilled Pista Kulfi – Here’s The Recipe
Love frozen delights? I’m a great fan of desserts and love to spread recipes to people that love making desserts. In today’s blog, let’s make this soul-satiating, popular Indian dessert – Pista Kulfi. Kulfi is one of the soul-satiating, popular Indian ice creams loved by all. It is a Popsicle made with milk and flavoured with saffron, cardamom, pistachio, and almonds served chilled. You can also make this Kulfi with Kesar, Almonds, Alphonso, Cranberry, and more. I love making Mango Kulfi for my family & it tastes divine and melts in the mouth. With cut mango fruit, it tastes more delicious & that’s a seasonal one. Today, I am sharing the Pista Kulfi Recipe.

Ingredients You’ll Need To Make Pista Kulfi:

1 Litre Milk,
-
full cream1/2 cup
-
Sugar1/4 tablespoon
-
Saffron4-5
-
Green cardamoms
-
12-15 Almonds (shredded),
-
blanched2 tablespoon
-
Pistachios (shredded)
-
5-8 Kulfi moulds (Depends On Your Family Size)
How to Prepare Pista Kulfi?

Take a wide, heavy-based pan & boil the 1 Litre milk in medium heat and simmer them. Keep stirring the milk to avoid scorching.

Simmer the milk until half of the milk is left in the pan. Generally, it takes about 30-40 minutes for the milk to thicken & you must wait until it does. Do not put the flame on high.

You can see the colour of the milk change to a beige cream, and the bubbles appear in the center of the pan.

Add the sugar and saffron, bring to a boil again and simmer for a minute or two.

Add the cardamom and turn off the heat.

Keep them aside and let the milk cool thoroughly. Then add the shredded pistachios, saving a few for garnishing.

Mix well and pour into moulds and freeze at the lowest possible temperature for 5-6 hours.

To serve, take the mould out of the freezer & press the kulfi out with the help of a knife.

Garnish with shredded pistachios and serve immediately.
